在貴州吃早餐,天天都可以不重樣。今天我們鎖定的是“包餅油條”。

這種曾經街頭隨處可見的地道早餐,如今已難尋覓。不過,在貴陽南明區(qū)的青山路上,還有這樣一家老店。每天清晨,都有人為這口老味道而來。

This authentic breakfast, once a common street sight, has become hard to find. But in Guiyang's Nanming District, on Qingshan Road, there remains one such old shop. Every morning, people come specifically for this classic taste.

 

將發(fā)酵好的油條面劑子放進高溫的油鍋里,不斷翻滾,炸至金黃酥脆后撈出。在提前煎好的面餅上抹好甜面醬與辣椒油,撒上蔥花和折耳根,隨后放入炸好的油條。老板手法嫻熟地將油條輕輕一壓、面餅順手一卷,一個熱氣騰騰、香氣撲鼻的包餅油條便制作完成了。

Place the formed dough into high-temperature oil. Continuously turn them until golden brown and crispy, then remove them. On a pre-griddled flatbread, spread sweet bean sauce and chili oil, then sprinkle with chopped scallions and fish mint. Place the fried dough stick inside the flatbread. With skilled hands, the maker gently presses the fried dough stick and rolls the flatbread—a steaming, fragrant Baobing Youtiao is ready.

咬一口,從最外層有嚼勁的面餅,到咸甜交織的醬香與撲鼻的油辣椒香,再到冒著熱氣、外酥里嫩的油條——口感層次分明,卻又融合得恰到好處。

With one bite, from the chewy flatbread on the outside, to the savory-sweet aroma of the sauce and the pungent fragrance of chili oil, and finally to the steaming youtiao—crispy outside, tender inside—the textures are distinct in layers, yet harmoniously blended in the mouth.
